It’s that time. The time when nothing hits the spot better than a crust of homemade bread dipped in a steaming bowl of soup. But as much as we all love a tureen full of hot soup, it can be difficult to get creative. There’s chicken noodle soup, tomato soup, broccoli cheddar, vegetable beef, and…well…what else is there? I’ve asked around and scoured the web, and here is a handy checklist of the best soup recipes you MUST try before Spring.
But first, let’s talk about my recipe for the best chicken bone broth you’ve ever had because it makes the perfect base for so many of these soups. Quick Note: this is a two day process, so you’ll need to plan ahead if you’re using it for soup
Chicken Bone Broth
What you’ll need:
Olivie Oil
A bundle of Fresh Parsley
A bundle of Fresh Thyme
3 Bay Leaves
Leftover Rotiserrie Chicken bones
2 or 3 Celery stalks
2 or 3 full Carrots
4 Garlic Cloves
A whole onion
Salt & Pepper
Cayenne Pepper
Water
Here’s what you do:
- Pull out your slow cooker and set it on low
- Drizzle Olive oil over the bottom (about 2 TBSP)
- Throw in the whole rotisserie carcass. This can be picked clean of meat, or untouched. Only the bones matter.
- Chop your onions and slice your garlic cloves in half. Break your carrots and celery stalks in two.
- Throw them in the crockpot with your chicken carcass
- Top this with 2 tsp of salt and and hefty helping of Pepper to taste (I like a lot. So I use somewhere in the neighborhood of 3 tsp), and a tsp of cayenne pepper
- Add your fresh parsley, Fresh thyme, and Bay Leaves
- Add water, an inch short of the top of your slow cooker
- Let it cook for 36-48 hours. Fill it back up with water at the 24 hour mark.
- Strain out all the bone and herb debris
- Use your delicious, NOURISHING bone broth to make one of these incredible soups!
